Recipe: Sausage Egg Biscuits

I’ve made these once before, and they’re amazing for work breakfasts. They freeze well, and you just take one out, wrap it in a paper towel, nuke it for a minute and 15 seconds or so, and shake some Sriracha on there. Voila: Heaven with your coffee! Recipe inside.

I made these with the sausage from my previous post, the only part I paid for today ($2). I made the biscuits with Bisquick, which I got way on sale awhile ago; call those 50 cents. Four eggs, 33 cents, and a dash of milk and salt/pepper, negligible. That’s it! Here’s what you do:

1. Prepare your eggs like you were going to make scrambled eggs — mix them up and break up the yolks in a bowl. Add milk and salt/pepper/spices to your taste (you can add cheese here, too, though I didn’t). Spray a muffin pan with baking spray and pour the egg mixture in. Bake at 350 for 15 minutes or so, or until the centers are set and opaque.

2. Fry your sausage (in a number of patties equal to the number of muffin cups you filled with egg, natch).

3. Put your sausage and your egg … patty? disc? … on a biscuit. Wrap in cling wrap and then in aluminum foil (I’ve found if you just wrap it in foil, the foil can stick in the crevices of the biscuit, which is ungood). Freeze. Behold: Sausagepods!
